BO SSÄM SET MENU

We offer the Bo Ssäm at 5:30 pm, 6:00 pm and 8:15 pm, bookable only via inquiry form.
The Bo Ssäm includes a slow-roasted Heritage Foods pork shoulder, which is cured overnight, then slow roasted for 6-8 hours before being glazed in brown sugar and its roasting juices. Accompanied by oysters on the half-shell, red kimchi, ginger scallion chimichurri, korean ssam sauce, fresh herbs, rice, and lettuce for making wraps.
This menu includes the Bo Ssäm and is accompanied by chef-selected appetizers, sides, and a dessert. Appetizers will feature a raw fish crudo, a selection of country ham, and a warm plated dish. Sides will focus on vegetables to balance the pork shoulder. Dessert will finish things off sweetly.

The Whole Roasted Duck Ssäm from Crescent Farms in Long Island, is stuffed under the skin with a duck and pork sausage before being roasted. The dish includes the whole duck, confit duck legs, scallion pancakes, red leaf lettuce, hoisin, duck-fat ginger-scallion sauce, Korean-style barbecue sauce and crispy shallots.
