Ssäm is Korean for enclosed or wrapped. A pork shoulder is cured overnight, then slow roasted for 6–8 hours before being glazed in brown sugar and its roasting juices. The Bo Ssam feeds 6–10 people, and includes the slow-cooked pork shoulder, a dozen oysters, and two bowls each of white rice, Bibb lettuce, Korean-style barbecue sauce, kimchi and ginger scallion sauce. Guests are encouraged to make wraps with the pork and condiments or eat as they please. The Bo Ssäm meal is $250 for your entire party, not including tax or tip.
We offer the Bo Ssäm at lunch between 12 – 2 pm. At dinner, we offer the Bo Ssäm between 5 – 6:30 pm, and between 10 – 11:30 pm.
